Pumpkin Spice Hot Apple Cider

 I wish I liked coffee.  I can’t even count the number of coffee drink recipes out there that I am tempted by.  But I just can’t get over the coffee flavor.  Years ago a coworker was determined to get me to like coffee.  He would come in with the fanciest drink you could think of – chocolate, caramel, whipped cream and whatever else they could put in there.    But it still tasted like coffee to me.  I love the smell of it, I just can’t get past the taste.  So last week when Steph over at Steph’s Bite by Bite posted a Pumpkin Spice Latte I was again faced with the temptation.  But this time I took matters into my own hands.  In walks Apple Cider! 

I used her pumpkin spice recipe, and then made a Pumpkin Spiced Hot Apple Cider.  Complete with the whipped cream and drizzle that you fancy coffee drinkers get!  This was even better than I hoped it would be.  I knew pumpkin and apple would go well together, but I just wasn’t sure how this drink would taste.  It was perfect for the cold and rainy day I made it on.  I have some pumpkin spice syrup left in my fridge right now, just wait to see what I thinking of turning that into!  

Pumpkin Spice

1/2 cup pumpkin puree
1/2 cup sugar
1/2 teaspoon vanilla
1 1/4 cups water
1 teaspoon cinnamon
1/2 teaspoon all spice
1/2 teaspoon ground ginger

Combine everything in a pan and bring to a boil. Reduce heat to low, and let cook for about 15 minutes, stirring occasionally.  You want the mixture to become thick and syrupy. 

Store in fridge until ready to use.

To make Apple Cider:
In a large mug heat 3 Tbls of pumpkin spice syrup.  Mix in hot apple cider.  Top with whipped cream, and drizzle with additional syrup.  Enjoy!

I can't stand the taste of coffee either, so I'm glad you made a drink for us non coffee drinkers. Especially one that uses hot apple cider. Yum :)

I like coffee on occasion when it's full of sweet stuff, but I just can't drink it every day either. This is the perfect substitute though!

Yum... love the idea of a hot spiced apple cider. I also like your pumpkin spice recipe. I need to seriously go get some all spice. I see so many recipes that I need it for and I don't have any. Thanks for encouraging me on the nomination. But I think you have a very very good chance walking away with it. But you are totally right... what a honor to be nominated. I really thought my blog was under the radar and I'm still shocked to be apart of such great company!!!

My husband is the same way..he hates coffee( I thought that he is the only one in the world who would say I hate taste of coffee lol) but he likes the smell, he tried so many since I am huge coffee lover but he never found one flavor that would attract his taste buds:))
Your Cider sound really good though, I think that he would enjoy this very much! Great shots!!!

Yum, yum, and yum! I love coffee but there is nothing like the Pumpkin Spice Latte from Starbucks. I wait all year to get a few. I limit myself to one a week. I could be dangerous if I start making this at home. I don't know if I would ever go to sleep.

Sounds wonderful Erin! I am so so on coffee. I can drink it if it is all frou froued up but not the "normal" way. But apple cider I drink no mattter what so I WILL be trying this!

I like coffee but prefer it decaf so I don't get all jittery. I stick to steamer recipes, essentially milk & flavorings. I've made my own pumpkin spice steamer but never with apple cider. I like your spin on this.
