Garden Fresh Salsa
I made this salsa the other day, and it got my husband and I talking. He said this was the first salsa he learned how to make during his summer in Colorado, 12 years ago. I remember that summer after he came back from Colorado us running all over Madison looking for a Smart Chopper so we could make this salsa. We got boxes of fresh tomatoes from the farmers market and made a ton of this stuff. Might not seem all that strange now, but when you look back to where we were at that time. I was 20, and going to college 2 hours away from where future husband was going to college. I can't remember what we did with all the salsa, I just remember making it!
Well if we are still making it today, that has to mean it is good, right? It is similar to what you would get at a good Mexican Restaurant. It is fresh, and delicious! Until we moved to Iowa we used to grow everything we needed to make this salsa in our garden.
Garden Fresh Salsa
Printable Recipe
2 or 3 medium size tomatoes (I like Roma's)
1/4 med size onion
4 sprigs cilantro
2 cloves garlic
1 tsp garlic salt
2 Tbls lemon juice
1 jalapeno
Use a food processor to mix everything but the tomatoes. Get it to a nice fine consistency. Add in tomatoes, and pulse a couple times. Leave slightly chunky.
Great idea to use a food processor. I made salsa once and we boiled the tomatoes, peeled the skin, mashed them, etc. It was a lot of work but homemade salsa is definitely worth the effort. This sounds perfect and simple. I love fresh cilantro in salsa...it's a must-have for me!

ReplyDeleteSalsa is a staple around here, it is always in our fridge. Your salsa does look amazing with all those big chunks of tomatoes, fresh and homemade cannot be beat.

ReplyDeleteSalsa and chips used to be my husband and mine (is that grammatically correct? it sounds awkward -oh well) we used to eat it after our kids were in bed. Then we moved and we haven't been able to find a salsa that we loved like the one we could get in michigan at the deli. I'd be happy to reinstate the tradition if I could find a worthy replacement....can't wait to find out (however I've noticed that salsa is usually better when someone else makes it.)

ReplyDeleteLol, that smart chopper gets me every time. It locks in the onion vapors and I forget then Im all covered in my own tears... Im such a sucker ;) This salsa sounds great - I can never pass up a good salsa - filling up on it long before dinner is even near the table!

ReplyDeleteI made this yesterday for my husband and I. It seriously came together in 2 minutes, it was great. Mine was a little too liquidy (I think I overprocessed) but I just strained out the excess liquid. Thanks Erin!
