I made these to bring to my family reunion, along with Margarita Cupcakes. I think these were the star of the show. Every single one of these was gone by mid afternoon. I saw this awhile ago on Bake Your Day. I am a sucker for anything with Almond Extract in it, strange I know. So when I said I would bring cupcakes, this was the first on my list to make. I am very glad I did, they are amazing.
Strawberry Almond Cupcakes
From Bake Your Day
Printable Recipe
1 (18.25 ounce box) Strawberry cake mix
4 eggs
1 cup buttermilk
1/2 cup canola oil
1 tsp. almond extract
1/2 tsp. vanilla extract
Combine cake mix, eggs, buttermilk, oil and extracts in a mixing bowl, mix with a whisk attachment on high for 1 minute, until all clumps are broken up.
Pour into a prepared muffin tin. Bake at 350 degrees for about 15 minutes, or until a toothpick inserted comes out clean and the tops spring back after being touched.
Allow cakes to cool on a wire rack before frosting.
Almond Buttercream Frosting
2 sticks butter, room temperature
3 – 4 cups powdered sugar
2 tsp Almond extract
1 Tbls milk
Cream together everything until the desired consistency is reached. You can adjust the milk and sugar to get your desired consistency.

ReplyDeleteHi Erin! Oh I love almond extract too. Ever since my friend recommended to add it in waffle (I didn't even own one till then), I am addicted to this extract. This cupcake must be so good with almond and strawberry combo! Your icing is beautiful too. I also did a major cleaning in our closets while my mom was here, but I couldn't finish my daughter's room. I know I have to work on it but I'm scared to start because it can be pretty exhausting. I'm envious your kitchen is nice and organized now!

ReplyDeleteI too am a sucker for almond extract! I made some ice cream last week with it, and now I want to include it in all future ice cream recipes :)
ReplyDeleteJust a suggestion if you haven't already created a binder for each magazine...I have 15 binders with various labels such as appetizers, salads, soups, muffins, cookies, etc, which have been really helpful in organizing my stash of recipes from magazines.
These cupcakes sound fantastic! Cleaning the kitchen...less fun. It's on my to-do list and I keep pushing it back to the bottom. Maybe if I entice myself with one of these cupcakes after the chore is done, it'll help the motivation :)

The frosting is perfect! I do like almond flavor in desserts, but don't use it too often. Now I am craving it after seeing these! So sweet.

Lovely cupcakes, Erin. I have a lot of organizing to do, but my kitchen is actually in good shape. It's my bedside table/dresser that needs a good overhaul!
