Grilled Margherita Pizza



It has been a great weekend  to have our 6 year old stay with his Grandparents.   We got lots done around the house, got to spend time together, and got to see friends.  Very excited to see him again, and hear all about his adventures.  I am sure the car ride home will be full of telling me everything.

I have been wanting to grill pizza all summer.  I have been waiting because I wanted to make Margherita Pizza with tomatoes from my garden.  They have been taking forever to turn red.  Finally I got one red tomato, so I was all about grilling pizza.  Unfortunately dinner was already planned, meat was thawed, plans the next night etc.  Long story short...Lunch!  Of course that meant I didn't have pizza dough made, so I had to improvise.  Tortilla's! 

There isn't much of a recipe here.  To start with you need one of these.



Heat on High for 15 minutes.  Oil the grates, and grill the tortilla until nicely browned on one side.  Flip over, and heat for a couple minutes.  Remove from heat, and top with desired toppings.  I drizzled with a little Olive Oil, topped with Mozzerella Cheese, Diced Tomatoes, Basil, and a tiny bit of garlic.  Return to grill, reducing the heat to low, and closing the lid.  Cook until the cheese is melted, and the crust is done to your liking. 

This was amazing!  I can't wait to try it with real dough!

  12. Great way to improvise so you could get your grilled pizza!. We have tomatoes that are all just starting to turn, it's so great to have them fresh whenever we want them.

  19. What a great easy recipe! I have a lot of tortillas left from the weekend and I know exactly what to do now! This is so easy to make and the best part is grilling is HIS job. ;-) Thanks for the awesome idea!

  20. This looks great Erin! Margherita is my favorite kind of pizza (well; after sausage, extra cheese and mushrooms lol) and I am loving the current trend towards grilling the pizzas. Now to get brave enough to TRY doing it :-P

  21. If this is on the menu I always order it-my favorite. I have never made it at home and the flour tortilla really is a good shortcut. It is sometimes those simple recipes that we love the most!

  27. Oh, I still have never grilled my own pizza! My husband and I were just talking about doing this the other day, however, so you must have read my mind. I'm totally going to do it now! :) Yours looks lovely.

  28. I only make pizza on the grill. Isn't it the best. I use a pizza stone or I should say bits of stone since I break every one, darn!
    I will have to try grilling the pizza right on the grill.

  30. Nice grill. I have grill envy. And pizza envy. This looks so good. We eat pizza way too much here. Plus my daughter works at a pizza joint in town. So it's pizzapalooza here.

  42. Love the tortilla aspect. What a great time saver, which I admittedly can use a LOT these days. Trey (about to be 5 on Monday) goes to school for the first time ever in less than three weeks. Very bittersweet, but yes...it will be nice to actually get something done while also missing him terribly. Even your pizza cutter is adorable...stop being so adorable. ;)
