Creamy Polenta



I ended up having to take my son back to the doctor today.  He just wasn't getting any better, after being on the antibiotic for 2 1/2 days.  They gave me a stronger antibiotic.  She told him in 24 hours he would feel like a new man!  I really hope that she is right!

I struggle with side dishes almost every night.  My family does not agree on vegetables, unless it is corn on the cob.  I like most veggies steamed or sauteed.  Husband, not so much.   He has a select few that he likes, but they happen to be the ones I don't!  So when I can find something that suits us both, it makes it into the rotation often.  This Polenta is one of those we both love!

2 cups Milk
1 cup Chicken Broth (or 1 cup water, 1 bouillon cube)
3/4 cup uncooked polenta
1/2 tsp Salt
3 oz reduced fat cream cheese

Simmer milk and broth together over medium heat.  Gradually add polenta.  Cook for approx. 20 minutes, or until thick and bubbly, stirring frequently.  Remove from heat, stir in salt and cream cheese.

We eat this a lot with pork chops, but it would go well with just about anything!

    We love polenta too! My mom used to make it when I was younger and its wasn't until I started the blog that she reminded me and sent me her recipe! Yours looks totally delicious

  2. We don't eat much of polenta over here at Malaysia Erin but it will be a good choice and your recipe certainly helps. I need to firstly learn to buy the ingredients first and then cooking it.

  6. First off...I hope your son is better soon. I hope the antibiotic works this time! The polenta looks amazing! I'm lucky - my hubby loves pretty much any vegetable...and secretly likes chick food! So, it's anything goes at my house!

  12. Awww, sorry your son still isn't feeling up to snuff; hopefully this med will take care of that.

    I loveeeeee polenta. But then again, I've been in the south for over 20 years and since it's akin to grits, how can I NOT love it? I'd be drummed out of the state if I didn't hehe. This looks wonderful. :-)

    I hope your little guy is up and running at full speed and health in no time. And I hope this will be it for his fall sicknesses! That's the biggest downside of going back to school season. My youngest starts this week...I'm sure she'll be bringing home something soon.

  16. Oh, I hope your son gets better quickly now. Yikes! Tough being a mom sometimes - even now when my boys are 27 and 24 - not always easy! You don't stop worrying completely but they are still worth it. :)

    Never had polenta - so hopped on by to see what it is. :)

  19. Believe it or not...I have never tried making polenta...but I love it and this looks good and easy! Sorry your son is having a rough start to his school year! Hope he is on the mend soon! : )

  28. Now I see. He wasn't getting better even with antibiotics. I'm really glad he's finally better. Feeding veggies to kids is always challenge and I always find a way to "hide" them in food because they won't eat them as a "side" dish! Your polenta looks delicious!
