Creamy Polenta
I ended up having to take my son back to the doctor today. He just wasn't getting any better, after being on the antibiotic for 2 1/2 days. They gave me a stronger antibiotic. She told him in 24 hours he would feel like a new man! I really hope that she is right!
I struggle with side dishes almost every night. My family does not agree on vegetables, unless it is corn on the cob. I like most veggies steamed or sauteed. Husband, not so much. He has a select few that he likes, but they happen to be the ones I don't! So when I can find something that suits us both, it makes it into the rotation often. This Polenta is one of those we both love!
Creamy Polenta
Recipe from Cooking Light
Printable Recipe
2 cups Milk
1 cup Chicken Broth (or 1 cup water, 1 bouillon cube)
3/4 cup uncooked polenta
1/2 tsp Salt
3 oz reduced fat cream cheese
Simmer milk and broth together over medium heat. Gradually add polenta. Cook for approx. 20 minutes, or until thick and bubbly, stirring frequently. Remove from heat, stir in salt and cream cheese.
We eat this a lot with pork chops, but it would go well with just about anything!
Your poor itty bitty. Rough first week of school! Hopefully this round of antibiotics will help :)
ReplyDeleteWe love polenta too! My mom used to make it when I was younger and its wasn't until I started the blog that she reminded me and sent me her recipe! Yours looks totally delicious
We don't eat much of polenta over here at Malaysia Erin but it will be a good choice and your recipe certainly helps. I need to firstly learn to buy the ingredients first and then cooking it.
ReplyDeleteThat sounds very good. I love side dishes like that.
ReplyDeleteI LOVE creamy polenta! This dish has everything I like, I'm wishing dinner time would come quicker, I could definitely go for a hearty meal like this one. Thanks for sharing Erin! =]
ReplyDeletehope your poor little guy is better ASAP. i love polenta, so this sounds delish to me!
ReplyDeleteFirst off...I hope your son is better soon. I hope the antibiotic works this time! The polenta looks amazing! I'm lucky - my hubby loves pretty much any vegetable...and secretly likes chick food! So, it's anything goes at my house!
ReplyDeleteI have never made polenta, but your recipe here does look fairly easy-worth trying. Hope that your next post tells us your son is much better!
ReplyDeleteI have only made polenta a couple of times with other people, but this seems easy. I am going to have to give it a try.
ReplyDeleteI love polenta! Though, I've only made it sliced and never just creamy. I will give this recipe a try sometime!
ReplyDeletePolenta is one of my FAVORITE foods ever. I love it with a poached egg on top.... and now my mouth is watering!!! :)
ReplyDeleteGreat recipe, it looks scrumptious. I am so sorry your little guy is still sick. I`ll be sending good vibes his way for a speedy recovery.
ReplyDeleteAwww, sorry your son still isn't feeling up to snuff; hopefully this med will take care of that.
ReplyDeleteI loveeeeee polenta. But then again, I've been in the south for over 20 years and since it's akin to grits, how can I NOT love it? I'd be drummed out of the state if I didn't hehe. This looks wonderful. :-)
I have never tried polenta, but I am now going to make it. This recipe sounds fantastic!
ReplyDeleteWishing your son a speedy recovery.
I have falled hard for polenta. It's amazing! Lookin good, Erin :)
ReplyDeleteWe struggle with side dishes too - half the time we just skip them. LOL.
ReplyDeleteI hope your little guy is up and running at full speed and health in no time. And I hope this will be it for his fall sicknesses! That's the biggest downside of going back to school season. My youngest starts this week...I'm sure she'll be bringing home something soon.
Oh, I hope your son gets better quickly now. Yikes! Tough being a mom sometimes - even now when my boys are 27 and 24 - not always easy! You don't stop worrying completely but they are still worth it. :)
ReplyDeleteNever had polenta - so hopped on by to see what it is. :)
We are huge polenta fans! I love the idea of including some cream cheese in there!
ReplyDeleteHope your little man is getting better!! Sending him get well wishes and hugs!

ReplyDeletei love how pretty that plate looks!
ReplyDeleteAwe, I hope your little man starts feeling better soon! Isn't polenta the same thing as corn meal mush but in a different for? I love that stuff!
ReplyDeleteThis whole meal looks so good! I have only had polenta once, it was made into cakes and I wasn't a fan. The cream cheese in yours sounds so good though!
ReplyDeleteAww, hope the little guy gets to feeling better soon!
ReplyDeleteThis polenta looks great. It's been a while since we've had some, so I might have to try this one out next time =)
I hope your son is back to 100% soon! I made grits cakes the other day that were similar to this polenta... makes a GREAT side dish! BUZZED!
ReplyDeleteYummi!
ReplyDeleteEnjoy Cooking.
Hope your son feels better real soon
ReplyDeleteI struggle with sides too and this sounds like an amazing one
Polenta's not a true side vege tho, but it's a great change of pace on the topic of variety. Hope your son's getting better soon!
ReplyDeleteI like polenta! This looks great!
ReplyDeletefantastic! I love polenta and I bet it would be great with porkchops!
ReplyDeletehope your little one feels better soon!
Now I see. He wasn't getting better even with antibiotics. I'm really glad he's finally better. Feeding veggies to kids is always challenge and I always find a way to "hide" them in food because they won't eat them as a "side" dish! Your polenta looks delicious!
ReplyDeleteThis polenta looks lovely...and I love that the calories are scaled down :)
ReplyDeleteI think I might have to make some for breakfast lol.
